When I was a kid, I was never a big breakfast fan. After adopting a vegan lifestyle in college and having my own kitchen in my apartment, my whole world turned upside-down. Breakfast became everything. My routine of eating soggy Cheerios turned into making delicious, colorful, and healthy dishes that were pretty easy and fun to make. My favorite breakfast by far is my Tofu Scramble X Avocado Toast. This is my most satisfying breakfast meal to me because it is protein packed, has healthy fats from the avocado, as well as containing essential carbs from multigrain bread and vitamins from fresh veggies. This meal is my go-to after an early morning gym workout when I feel like I need to refuel myself. Plus, it's pretty.
One thing to know about me and recipes, is that I'm not very exact with my measurements. Whenever I use recipes, I tend to be very innovative with my measurements, adding extra onion and throwing in my own spices if I want. That being said, you will see words such as a "dash" or "however many the heck you want" in my recipes. Don't worry, I believe in you!
First things first, you are going to want to gather your soldiers, aka ingredients. Everything I use here is just what I use, so please feel free to add, subtract, or substitute where you see fit. I don't have them listed here, but broccoli and/or mushrooms make a great addition to this dish!
Tofu Scramble X Avocado Toast
Cook/Prep Time: Around 20 min (depending on how crispy you like your tofu and how fast you chop)
- Extra firm tofu
- Onion
- Avocado
- Tomatoes
- Watercress microgreens (any type of microgreen works great, the store just had these)
- Bell pepper (any color)
- Whole grain bread (I use Dave's bread, but you could use whatever the heck you want, even a bagel!)
- Hemp hearts (great source of protein!)
- Nutritional yeast (this is what makes the tofu taste cheesy and savoy! Also a great source of vitamin B12 and folic acid)
- Olive oil
- Red pepper flakes
- Salt
In regards to how much Tofu, tomato, avocado, bell pepper, etc... It really depends on how hungry you are. I usually use around 1/4-1/3 of the pack of tofu, half an onion, half a bell pepper, and the entire avocado. Feel free to be your own judge!
Step 1: Press the water from your tofu
If you are vegan or a veteran tofu eater, feel free to skip my brief instructions here for the newbies. You will need to press the water from your tofu. "Press the water? What the heck?" you might ask. Well, tofu is very absorbent and has a lot of water in it that will need to be pressed out so that it cooks right and gets nice and crispy. I recommend plopping the tofu on a cutting board and pressing down on the tofu with some paper towels. I have also seen reusable tofu pressers that I am interested in, but I have never used one myself. Don't worry about getting every last drop out, it won't make that much of a difference.
Step 2: Crumble your tofu into a pan with some olive oil
I usually put my pan on medium to high heat. I find that cooking tofu on high heat makes it crispier, plus I get impatient. Crumbling tofu is super easy. Once it is in the pan you can further break it up with a wooden spoon or spatula. Mix it around with the olive oil and evenly distribute it so that it cooks evenly.
Step 3: Shake on some nutritional yeast!
This part is the best! I never measure how much I put in, maybe 8-10 shakes, just enough so that the tofu is light yellow. The more you put in, the stronger the cheesy taste will be. Nutritional yeast is pretty healthy, so no worries if you go a little wild with it. Mix the yeast in with the tofu and let everything sizzle in the pan while you prep your other ingredients.
Step 4: Cut up your bell pepper and onions
This part is pretty self-explanatory. Just don't chop off your fingertips and you'll be fine.
Step 5: Add the bell pepper and onion to the pan
Throw everything in the pan! This is the point that I shake in some black pepper, red pepper flakes, and salt.
Step 6: Start toasting your bread
I usually use two slices. Push those babies down.
Step 7: Cut up your avocado and tomatoes
You can use however many tomatoes as you want, or half an avocado, but I am a hungry gal. I usually cut my avocado into slices to put on top of the bread, but you can mash it if you'd like as well. Whatever floats your goat.
Step 8: Dress your bread
Toss that avocado on your bread. I throw some salt and black pepper on the avocado, as well as hemp seeds.
Step 9: Add your greens!
I used watercress microgreens this time, but I usually get arugula microgreens because they are smaller with less stem, but anything works. I thinned out the watercress by taking out some of the stems and focusing on the leaves. I have also used regular full grown arugula before in a pinch, as well as bean sprouts. Get creative!
Step 10: Add your tofu scramble and tomatoes
Wow, you've made it! Put everything on the plate and enjoy the masterpiece that you have created.
